Sauvignon Blanc, 2019ThereAfter Sauvignon Blanc, 2019
This is our 2019 Sauvignon Blanc from Evina vineyard. I found this vineyard when I met Tom Morgan who has been farming that piece of land for a couple of generations. Well, his father farmed before him. And it's on some really cool old sandy soil. It's also made from the Sauvignon Musque clone, which is a little different than probably what most people are used to with Sauvignon Blanc.
It's a little more aromatic, but it's not as grassy. I would say it's a bit less of a New Zealand and more of a French-style Sauvignon Blanc so drawing more towards flint and floral notes. We fermented it in barrel to enhance that quality, instead of making it in a tank with a bunch of yeast, that's supposed to smell tropical.
We use a cigar barrel for aging. The cigar barrel had a beautiful influence of spreading out the sediment. And so the sediment can create a little bit of complexity and flavor. Yeah. And food-wise I think this could be a very well an aperitif wine. So by itself or with a board of fresh cheese or paired with some Vietnamese cuisine.
