Before you commit the wine to final fermentation or riddling you capture the wine with enough CO2 inside to create natural carbonation during the final fermentation. "This is a traditional white Bordeaux blend you would find in #Napa with a twist in deference to Steve and Jill and their heritage to the #Friulu region of northern Italy. 50% Sauvignon Blanc 25% Ribolla Gialla 23% Semillon 2% Tocai Friulano (deep apologies for my horrible Italian!) Clear lemon color appearance. Medium [+] intensity aromas of crisp citrus notes of grapefruit and lemon peel, wet stone minerality and stone fruit nectarine with youthful characteristics. Dry and medium acidity on the palate with medium [+] intensity flavors of same with traces of graphite and blossom, full body, medium alcohol (12.5 ABV) and long finish. Very good wine which you might try to hold for a few years like a white Bordeaux but don’t. Enjoy this now and through 2022 with summer fare, seafood and risotto. "While you might associate Napa Chardonnay with big oak and vanilla, Jill and Steve kept the malolactic fermentation to 2/5 of content with only native yeast. The result is a crisp refreshing mouthfeel reminiscent of Chablis style wines. Clear lemon color appearance. Medium [+] intensity aromas of crisp citrus notes of stone fruit nectarine and peach, orange blossom, grass and honey with youthful characteristics. "2018 Tethered Red Wine Rhône blend 60% Syrah and 40% Grenache sourced from Santa Maria. Lots of red fruit, white pepper and herbaceous notes on the nose with medium [+] intensity airy aromas with developing characteristics and medium ruby color. Medium [+] acidity and dry on the palate with medium intensity flavors of same with citrus and nectarine traces on the finish with medium tannins and high alcohol (14.6 ABV) with a lingering finish. "TOP 🚀 SECRET Excited to try this vintage once again sourced from Edna Valley AVA in San Luis Obispo County. My notes: Medium ruby color. Medium intensity aromas of raspberry, red currant, pastry and pie crust with traces of allspice with developing characteristics. Compared to the 2018 vintage this 2019 vintage is more fruit-forward and lower alcohol (13.6 ABV) with still the balanced medium acidity and dry palate, medium intensity aromas of same with additional tobacco leaf traces, medium tannins, and great structure and body with a long finish.
