"Irreverant" Rosé Carignane, 2019

This is what happens when you take some really old Carignane (like pushing the century mark) and turn it into a dad-ass rosé. All fresh strawberry up front, the wine's surprising depth and acidity keep things exciting. The bone-dry finish hangs around longer than you might expect.

Carignane (Carignane 02) from 80 year old vines from Shinn Ranch, Mokelumne River (100%). Harvested on 2019-09-12 at 22.6 brix .
Press: The fruit was de-stemmed and the juice left to sit on the skins for 90-minutes before going into the press.
Fermentation: The primary fermentation was temperature-controlled and lasted approximately 22-days.
Clarification: The wine was both heat and cold stabilized.
Seven months in stainless steel.
Bottled on: 2020-04-27
