"PET NAT!! If you aren’t familiar with Pétillant Naturel wines - Pet Nat for short - it’s what the cool kids are drinking now. Before you commit the wine to final fermentation or riddling you capture the wine with enough CO2 inside to create natural carbonation during the final fermentation. Jason does a great job with this and his still rosé is also worth a visit - some lees and American oak builds structure during fermentation. You can serve this Pet Nat as a traditional sparkling wine in a flute, I’m tasting today in a claret glass to capture all of the flavors and aromas for you. … Review: pale strawberry color, medium intensity aromas of raspberry, strawberry, blossom, pastry crust, with hints of white peach and nectarine with developing characteristics.
