This sparkling wine was made in the traditional Méthode Champenoise meaning the base wine was fermented then had additional grape juice and yeast added before bottling. Each bottle underwent it’s own fermentation and was aged for almost 3 years on yeast to add mouthfeel and structure to the wine. Expect aromas of white peach and slightly toasted bread. Tiny bubbles slowly form a creamy mouse creating a rich, long finish.
